Harry Potter Butterbeer Muddy Buddies are made with rice Chex oat, butterscotch, spread, toffee, and powdered sugar for a sweet and delectable bite!
My butterbeer sloppy pals are sweet and rich and bested with a toffee crunch and lightning jolt sprinkles. The way in to this formula is the impersonation margarine seasoning/extricate. I know, I know. In any case, truly — it truly draws out the BUTTER in butterbeer.
I love making Muddy Buddies since they are so natural (thus addictive)! They make an incredible treat around the special seasons and I love thinking of fun new flavors!

Ingredients
- 8 cups Rice Chex cereal
- 12 ounces butterscotch chips
- 1/2 cups salted butter cubed
- 1 teaspoon vanilla extract
- 1 teaspoon imitation butter extract/flavor1
- 1/4 cup Heath Bits O Brickle Toffee Bits
- 1 1/2 cups powdered sugar
- lightning bolt sprinkles optional
Instructions
- Measure the cereal into a large paper bag.
- In a medium microwave-safe bowl, melt the butterscotch chips on 50% power for 30-seconds then stir and repeat in 15-second increments until the chips are melted and smooth. Do not overcook or the butterscotch will scorch!
- In a small bowl, melt the butter in the microwave until fully melted. Whisk into the butterscotch along with the vanilla and butter flavoring.
- Dump the butterscotch mixture into the brown paper bag with the cereal and the Toffee Bits and shake to coat! Spread on a cookie sheet and allow to cool for 20 minutes.
- Add the mixture back into the bag (you may need a new bag if the first one is too buttery), and add the powdered sugar. Shake again to coat. Serve, sprinkled with lightning bolt sprinkles!
